Italian Salads and Vegetables

In Italy, salads can be as simple as leafy greens or more complex, such as composed tomato salads or bean and bread salads. Vegetables are inextricably linked to Italian cooking and help define the cuisine. One or two vegetable dishes are offered alongside the main dish, and are meant to add complementary flavors and textures that round out the course.
