Chicken en cocotte—called poulet en cocotte in French—is one of the simplest ways to get a perfectly cooked whole chicken on the dinner table. The dish forgoes the crisp, rendered skin of traditional roasted chicken, but if offers extremely moist and tender meat that tastes of chicken, and little else.
You'll be seasoning the chicken with garlic and rosemary, and the handful of garlic cloves that are cooked in the pot with the chicken are used to flavor the jus and give it some body.
Once you master this technique, you can create chicken en cocotte with seasonings of your choice. You can try other hardy herbs like oregano, marjoram, lemongrass, or herbes de Provence; aromatic vegetables like fennel or shallots; citrus zest; or fresh ginger, to name just a few ingredients that would do well en cocotte.
