Chicken Cacciatore, or Italian hunter’s style chicken, is a hearty red wine-based braise that’s meaty with mushrooms and tomatoes, and redolent of garlic and fresh herbs. This recipe employs chicken-braising techniques: browning the thighs, sautéing the aromatic vegetables, removing the skin, and simmering in the oven until the chicken is tender but still clinging to the bones. Crusty bread or polenta would be an excellent accompaniment for the cacciatore.
